Fred Berkmiller is chef patron of bar à vin and l’escargot restaurants. L’escargot bleu opened on Broughton Street in 2009 and l’escargot blanc, which sits above bar à vin, launched shortly afterwards. They are family-run restaurants with Fred's partner Betty overseeing front of house.
Fusing classic French technique and carefully sourced Scottish ingredients, l’escargot restaurants feature regularly in lists of Edinburgh’s best restaurants. In addition to appearing in the Michelin Guide each year, l’escargot restaurants have won many awards.
Fred has also earned much acclaim. He is particularly proud of being given the Special Award at The List’s annual Eating & Drinking Guide Awards 2014. The Special Award recognised Fred’s commitment and contribution to Scottish food culture. Similar criteria saw him awarded the title of ‘Food Pioneer’ at the Scotland Food & Drink Excellence Awards 2016. And has won 2017 award for Scottish Sourcing.
From a snail producer on the Isle of Barra to Perthshire Wagyu cattle farmers, Fred regularly visits his suppliers and works with them to get the most from their produce.
